Fresh Tuna Tartare with Orange-Black Sesame Sauce

Yield: 6 Servings


6 ounces sushi-grade tuna, cut into ¼-inch dice
½ seedless cucumber, cut into ¼-inch dice
2 tablespoons black sesame seeds
2 tablespoons soy sauce
1 teaspoon sesame oil
2 tablespoons green onions, green parts only, thinly sliced
Sea salt to taste

Sesame Sauce:

1 cup freshly squeezed orange juice
1 teaspoon orange zest
1 clove garlic, minced
1 tablespoon soy sauce
1 teaspoon freshly grated ginger
1 teaspoon hot chili sauce like Sriracha
1 tablespoon corn starch, dissolved in 2 tablespoons of water
Sea salt to taste


In a medium bowl, combine the tuna, cucumber, sesame seeds, soy sauce, and sesame oil. Season with salt, and gently toss the mixture to combine. Cover and set the tuna aside in the refrigerator to marinate while you make the sesame sauce.

In a small saucepan, combine all of the ingredients for the sesame sauce over medium heat. Season with salt, then bring to a boil, while stirring constantly. When the mixture has thickened, remove from heat and set aside to cool to room temperature.

Add 1 tablespoon of the sesame sauce to the tuna and stir to combine. To serve the tuna, place a 2-inch circle cutter on a plate and fill with a 1/6 of the tuna. Gently press the tuna into place, then remove the mold and garnish with sliced green onions. Drizzle the sesame sauce around the tuna and serve.
